In the UK, eggs with a British Lion stamp are considered safe to eat raw or lightly cooked due to vaccination against Salmonella. However, in the US and if British Lion eggs aren't used, it's important that eggs are fully cooked until the whites and yolks are firm, or that pasteurized eggs are used, especially in dishes that aren't fully cooked.

Additionally, the cured pork (like pancetta or guanciale) typically found in carbonara should be thoroughly cooked until crispy and steaming hot to eliminate potential risks of bacteria like Listeria or Toxoplasma. When preparing carbonara at home, ensure both the eggs are adequately heated (or use pasteurized eggs) and any cured meats are cooked through. If you're eating out, it's a good idea to ask the restaurant about their cooking methods for both the eggs and the pork to ensure they meet these safety standards.
