The main concern with cooked rice is a bacterium called Bacillus cereus, which can produce toxins if the rice is left at room temperature for too long. These toxins can make you very unwell with vomiting and diarrhea, and for pregnant mamas, severe dehydration or fever can be a concern for you and your baby.
To keep you and your little one safe, it's crucial to cool cooked rice as quickly as possible, ideally within one hour and definitely within two hours of cooking, by spreading it out in shallow containers before refrigerating it promptly. Once it's in the fridge (at 40°F or 4°C or colder), aim to eat it within 24 hours, and always reheat it until it's steaming hot all the way through, reaching an internal temperature of 165°F (74°C). Please don't reheat rice more than once. If you're ever in doubt about how long it's been out or how it was stored, it's always best to just toss it out.
